🚀 Feature: Migrate away from `cypress-plugin-snapshots`

🔖 Feature description

Replace cypress-plugin-snapshots with cypress-plugin-visual-regression-diff in the techdocs-cli.

🎤 Context

cypress-plugin-snapshots seems to be unmaintained since some time back and pulls in at least one vulnerable transitive dependency (an old socket.io). Their own issues seem to refer to cypress-plugin-visual-regression-diff as a replacement.

✌️ Possible Implementation

Seems to be a pretty straight forward replacement. There seems to be only two usages of .toMatchImageSnapshot in the cypress tests.
