Hook up logstash to production

Desired behaviour
Figure out how to configure the logstash input/output’s “host” to provide more info.
Currently all logs have 'host': 'gateway'

Seems to be working
Can likely reuse the same Kibana and Logstash server, the “host” would differentiate between production and staging. Last I tested it, Logstash/kibana’s data/config persists when restarting compose_setup in the same way that the db is, but is not backed up to anywhere else.
