pip install "jupyterlab>=2.0.0,<3.0.0"
Could we install the newest version of jupyterlab (3.0.1) ?

Same here, using the default Kubeflow image for Jupiterlab server, and even the previous release of Kubeflow (1.4.1) uses Jupyterlab 3.0.16 by default
