Why POST to

/connector-plugins/mqtt-source/config/validate

I though it is supposed to be

/connector-plugins/com.datamountaineer.streamreactor.connect.mqtt.source.MqttSourceConnector/config/validate

The call is wrong it should be to the class name not the name of the connector as @Antwnis says

Try using https://github.com/Landoop/kafka-connect-tools to manage your connectors or Lenses https://www.landoop.com/kafka-lenses/
