Corrupted logs

After Images page is loaded for the first time (assuming single execution life cycle) few log files are broken. For instance lima.log file is corrupted after loading Images page. All previous logs are lost and the file format is corrupted, most text editors complain in on way or the other while opening the file.

To Reproduce

• Launch RD, wait for the cluster to be up and ready without opening any other page than the default one.
• Copy ~/.local/share/rancher-desktop/lima.log to somewhere (just for comparison purposes)
• Click/Load the Images page
• Open ~/.local/share/rancher-desktop/lima.log with some text editor and, most likely, the editor will complain of corrupted file.
• Compare ~/.local/share/rancher-desktop/lima.log to the copied old version of the file verify all the initial logs are gone.

Expected behaviour Log files are not corrupted and include all the logs for, at a least, for the current runtime.

• OS: openSUSE Leap 15.3
• Rancher Desktop version: v0.6.1
• Kubernetes version: any

I’ve removed the platform labels because the issue has now been reproduced on all platforms, and not just with lima.log, but also background.log on Windows.
